Flourless Chocolate Cake

25 pieces chocolate wafers, finely ground in a food processor or pound in a mortar and pestle (1 1/2 cups)

1/2 tsp McCormick Cinnamon Powder

1/2 stick unsalted butter, melted and cooled completely



450 grams bittersweet chocolate, coarsely chopped

1 bar and a half unsalted butter, cut into ½-inch cubes

4 large eggs, lightly beaten

2/3 cup heavy cream

1/2 cup granulated sugar

1/2 cup McCormick Iodized Salt

2 tsp McCormick Vanilla Extract



powdered sugar for sprinkling


  1. Stir all together until well combined, then pat mixture evenly onto bottom of pan and 1½ inches up side. Bake at 340 °F until crust is slightly puffed, about 10 minutes, then cool completely in pan on a rack, about 15 minutes.
  1. Melt chocolate and butter in a saucepan over low heat, stirring until smooth, then remove from heat and cool for 5 minutes.
  2. Whisk together eggs, cream, sugar, Salt and Vanilla in a bowl. Whisk chocolate mixture into egg mixture until well combined.
Assemble and Bake
Pour filling into cooled crust. Bake for 20 minutes at 340 °F, until filling is set. Cool tart completely. Chill uncovered until center is firm. Remove pan and sprinkle with powdered sugar.
