McCORMICK SPICY SECRETS: Chicken Three-Ways by Chef Mikel Zaguirre

SpiceMix – are blended spices or herbs. A mix of spices & herbs that makes meals tasty and aromatic. It’s always convenient to have a spice mix ready before hand. Note: Can also be used for a wide variety of protein or vegetable.




Italian Spicemix:

2 tbsp Dried Basil 

1 tbsp Dried thyme 

1 tbsp Dried Marjoram 

1 tbsp Dried Oregano 

1 tbsp Dried Sage 

1 tbsp Dried Rosemary 

1 tsp Garlic Powder 

1 tsp Sugar 

1 tsp Salt 



Mexican Spicemix

2 tbsp Chili Powder 

3 tsp Cumin 

2 tbsp Onion Powder 

3 tsp Garlic powder 

2 tbsp Paprika 

1 tbsp Dried Oregano 

½ tsp Cayenne Pepper 



Cajun Spicemix

2 tbsp Paprika 

2 tsp Chili Powder 

1 tsp Cayenne Powder 

½ Black Pepper 

1 tbsp Oregano 

1 tsp Thyme 

1 tbsp Coriander 


  1. Get: 2 TBSP of the Spicemix of your choice.
  2. Add: Any liquid you like - mustard, tomato sauce, soy, yoghurt, Worcestershire.
  3. Drizzle: Drizzle with any flavored or cooking oil you want - olive oil, grapeseed oil, canola oil, truffle oil, peanut.
  4. Cook: Any cooking method you want - Pan Seared, Roast, Bake, fry, sauté, grill, broiled.
