Seared Yellowfin Tuna with Citrus Salad

Seared Yellowfin Tuna with Citrus Salad

Ingredients

1/2 kilo trimmed yellowfin tuna fillet

1/4 tsp McCormick Iodized Salt 140g and McCormick Black Pepper Ground, to taste

1 tbs oil

 

Citrus Salad

2 pcs oranges, segmented

2 pcs ruby grapefruit, segmented

200 g black olives chopped parsley, to garnish

 

Lemon Vinaigrette

1 tsp McCormick Garlic Minced

1/8 tsp McCormick Iodized Salt 140g

1 tbsp McCormick Prepared Mustard

1 pc lemon, zested and juiced

1 tbsp honey

1/2 cup olive oil


Directions

  1. To make the dressing, mix everything together except olive oil.
  2. Slowly drizzle in the olive oil, whisk continuously until you achieve a thick consistency. Set aside.
  3. Prepare salad by combining orange segments, grapefruit segments and olive together. Place in a serving platter.
  4. Cut tuna fillet into 2 lengthwise portions. Season with salt and pepper.
  5. Heat oil and sear sides of tuna on high heat.
  6. Slice the tuna and fan below the citrus salad.
  7. Drizzle plate with vinaigrette and serve immediately.
